Observation (CORRECTED DURING INSPECTION): -Some bagels were found on a baking tray (that had holes) placed in top the step of the ladder.
-There were frozen water droplets found on the walk-in freezer ceiling and looked like they were dripping onto the cardboard box of muffins placed above two crates. The muffins inside was covered with plastic.
Corrective Action(s): -Discard the bagels. Move the box to a location on the shelf.
-Clean the frozen water droplets on ceiling.
-Monitor for water droplets and wipe them as necessary.
-Do not store food directly below the ceiling area where water could be dripping.

Comments

-Foods in cold-holding units = or <4C.
-Foods in hot-holding units = or >60C
-Handwashing station had hot and cold running water, soap and paper towels. (There was not hot water initially. Temperature not consistent. May want to look into it.)
-No evidence of pests. Invoices from Orkin provided. Last service completed on Jan 17, 2019. Pest control contract in place for service monthly.
-General sanitation of premises satisfactory. Ensure that cleaning is done according to your sanitation plan.
-Quats sanitizer in bucket and at the sink: 200ppm.
-Stirring spoons were in placed in ice water.
-Please send information from Food Safety Plan that indicates fondant are able to be kept at 34C to nicole.truong@fraserhealth.ca.
