NO VIOLATIONS OBSERVED:
- Facility in EXCELLENT sanitary condition
- No evidence of pests
- Pest control program in place
- Handsinks adequately supplied
- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Two sink plugs available for use
- Dishwasher achieving final sanitizing rinse of greater than or equal to 71 degrees Celsius (74.7 degrees Celsius observed) at the dish
- Sanitizer solution in use throughout kitchen food preparation areas and at concentrations of greater than or equal to 200ppm QUAT from dispenser and in spray bottles
- First In First out and date stamping methods observed in use


NOTE: EHO to review food safety plan for "pepperoni sticks" - currently facility cooks and stores for 4 hours, then extras are placed in cooler unit at 4 degrees Celsius
