Observation: -2 of 3 Sanitizer spray bottles showing ~0ppm chlorine residual

-When reviewing Manual Wash method they are only using soap and water

-No Chlorine Test Strips available for monitoring santizer solutions
Corrective Action(s): -Minimum sanitizer bleach solution is >100ppm chlorine residual
NOTE: do not dilute your source bleach bottle as operator diluted again when making the spray solutions

-You must be sanitizing dishware as well with your bleach sanitizer not just soap and water as per the Manual Wash signs posted!

Step 1: Wash with soap
Step 2: rinse with warm water
Step 3: Sanitize in bleach solution >100ppm (1/2 teaspoon bleach + 1 liter water) minimum contact time of 30 seconds
Step 4: Air dry

-Obtain Chlorine Test Strips to monitor your sanitizer solutions

Observation: Open bulk food bags STILL not placed in rodent proof containers observed in the warehousing side and processing side.
Corrective Action(s): Keep ALL open bulk food bags in the processing area and at the ends of the night place in rodent proof containers (such as your Rubbermaid containers) with lids on tight -this is an added pest deterrent

Observation: Glass fluourescent bulbs in the processing/dishpit area not shielded

One of the bulbs above the dishpit area is burnt
Corrective Action(s): Place the standard light covers or plastic bulb tube guards for shielding the lights in case of glass breakage

Replace the burnt bulb for adequate lighting
