Observation (CORRECTED DURING INSPECTION): Sauces and gravy cooling over ice measured at 10-12C. Ice at low level, not properly cooling deep sauce containers. food handlers reqiure further training.
Corrective Action(s): Cool sauces/gravy in ice water bath covering majority of container. Corrected during inspection, maintain procedure going forward.

Observation (CORRECTED DURING INSPECTION): QUATS solution in wiping cloth bucket measured at 100ppm, insufficient concentration for proper sanitizing.
Corrective Action(s): QUATS solution must be maintained at 200 ppm minimun, and changed every 2-4 hours.
Service QUATS dispenser so it consistently dispenses 200 ppm solution. Alternate sanitizer on-site, being used (bleach).
Bleach: Use 1 oz per gallon of water, makes 100 ppm solution.
