Observation (CORRECTED DURING INSPECTION): Walk-in cooler observed to be open at time of inspection. Temperatures of products measured ~7°C.
**Corrected during inspection** Inspector closed cooler door. ASM stated unit can maintain temperatures < 4°C.

Educate staff on importance of keeping products at temperatures of 4°C or less, and how keeping the walk-in cooler doors closed is necessary to achieve that. Monitor and keep temperature logs to ensure unit can maintain temperatures of 4°C or less.

Observation: 1. 3 compartment sink observed to be not used properly.

Observation (CORRECTED DURING INSPECTION): Staff observed to be changing gloves only. This may be due to the distance of the handwashing stations.
**Corrected during inspection** ASM to review handwashing with staff.

Refresher training to staff on importance of washing hands is strongly recommended. This is the second department to have issues with handwashing.

Recommended to consider installing hand washing station closer to the preparation area of the department to promote handwashing.

Observation (CORRECTED DURING INSPECTION): Potentially unsanitized mixing bowls used to hold food (decoration tube). Inspector observed staff handing another staff mixing bowl draining table to hold decorating tubes.

0ppm QUATS measured in all sink basins and wet equipment suggesting none of the equipment is sanitized.

**Corrected during inspection** Inspector instructed staff to relocate decoration tubes to a sanitized container.

Recommended for staff to review or undergo refresher training on approved sanitation plan. Follow approved 3 compartment sink dishwashing method. "Sanitize" basin is closest to draining board to make it easier for equipment to be air dried after sanitizing.
