Observation: The two hand sinks in the sushi making area have no running water that exits the faucets. Staff are unable to wash their hands correctly, this will allow pathogens to be transmitted via staff hands.
Corrective Action(s): Immediately call a plumber to determine and fix the two hand sink faucets, so that hot water exits the faucets.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: There is accumulated grease and food on exhaust hood and filters; on the walls adjacent to the deep fryers; the floor under the deep fryers; the exterior surfaces of the deep fryers & flat grill; and on the decorative rocks at the base of the walls adjacent to the deep fryers. The grease and food will attract pests.
Corrective Action(s): Immediately wash and sanitize these surfaces to remove the grease and food. Using a degreaser (Vim, Power & Shine Kitchen cleaner) will make it easier and faster to remove grease on surfaces. The exhaust hood filters should be cleaned at least once a month (or more).

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: 1) Found protective plastic covering the ice machine and the back kitchen assembly cooler. The plastic is not cleanable and its purpose is only to protect the machines from scratches during transit.
2) Found a metallic type material or wall paper covering the counter tops around the two, front hand sinks; the top and sides of the dishwasher; and on the wall above the 3-compartment sink. This material is not food grade, durable, sealed, or cleanable.
3) Found wall paper covering the wall adjacent to the deep fryers, and the wall paper is covered in food. The wall paper is not food grade, durable, sealed, or cleanable.
Corrective Action(s): 1) Immediately peel off all the protective plastic covering the mentioned surfaces, and use a degreaser to clean and remove the glue.

2) Immediately remove the metallic type material from the mentioned surfaces. Repair or replace any damaged surfaces with food grade materials (stainless steel, drywall, FRP, etc.).

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: There are large openings and missing areas of drywall in the walls adjacent to the deep fryers. The metal studs are showing and the exposed drywall is not sealed and have accumulate grease and food. This makes it difficult to clean the surfaces and it will attract pests.
Corrective Action(s): Repair the walls so that they are durable, smooth, level, sealed and cleanable. Install drywall to cover all the openings and the studs. Seal the cracks between the drywall sheets with drywall mud; sand; and then paint.

Comments

A routine inspection was completed the following observations were made:
- Coolers 4C or colder; freezers -21C or colder; hot holding units above 60C; and thermometers present.
- High temperature dishwasher had rinse cycle temperature of 73.3C at the plate's surface, as per max/min thermometer.
- Bleach sanitizer in spray bottles had [Cl2] of 200ppm.
- Back kitchen hand sink had running hot and cold water, liquid soap and paper towels.
- All foods stored in food grade containers; covered; foods stored in groups with raw proteins on lowest shelves below RTE foods; and foods stored 6" off the floor.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is satisfactory. Improvement needed in the mentioned areas.
- Exhaust hood professionally cleaned in Feb 2022, next service due in August 2022.
- No signs of pests.
- FoodSafe certified staff present.
