Observation: At time of inspection, staff member did not possess a valid FoodSafe Level 1 certificate, or equivalence course. Staff indicated that they just started employment and they will be completing the course next month.
Corrective Action(s): Enroll into the next FoodSafe Level 1 course, or equivalent course, complete and obtain a valid certificate.

Comments

A routine inspection was completed, the following observations were found:
- Coolers 2C; freezers -19C; hot holding of PHF breads in toaster oven was 60C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- 3-comp sink present for dishwashing, bleach available for sanitizing.
- Bleach sanitizer in spray bottles had strength between 100-200ppm. Ensure to mix up a new solution every 2-3 days.
- All foods stored in food grade containers; covered; dated coded; foods stored in groups; and foods stored 6" off the floor on shelves or platforms.
- General sanitation level is excellent. Keep up the good work.
- All surfaces are in good working order, durable, smooth, sealed, and cleanable.
- A few old mice droppings found behind the front, upright freezer and in the back storage room along the base of walls behind food. Professional tin traps found throughout the premises. No signs of pests.

ACTION:
- Clean up the old mice droppings and sanitize any areas that came into contact with them. Take everything off the floor in the back room to sweep and clean along the base of all walls (especially under sinks and shelves).
