Comments

- Handsinks supplied with hot and cold water, liquid soap, and papertowels.
- Cold holding equipment are operating at acceptable temperatures (Coolers ≤4C) (Freezers ≤-18C):
- Barista Prep Cooler: 3C
- Front End Display Cooler: 3-4C
- Kitchen Chest Freezer: -24C
- Kitchen Double Door Cooler: 2C
- Kitchen Single Door Upright Freezer: -18C
- Kitchen Upright Display Cooler: 4C
- Danby Upright Freezer: -18C
- Cold holding equipment are equipped with a thermometer to facilitate temperature monitoring.
- Entrees prepared off site and cooled on site: 4-7C. Per staff records, food was delivered less than 6 hours prior to the start of the inspection. Ensure that proper cooler procedures and temperature monitoring procedures for cooling are reviewed with staff. Improper cooling has been noted during previous inspections.
- No hot holding at time of inspection (after lunch rush).
- Temperature monitoring records for cold holding equipment and hot holding items are maintained and up to date.
- Food storage practices appear satisfactory. Food is protected from contamination.
- 200 ppm QUATS sanitizer for sanitizing food contact surfaces available in spray bottles at food preparation areas.
**Ensure wiping cloths are stored in sanitizing solution between uses.
- Low Temperature Chemical Sanitizing Dishwasher: 100 ppm chlorine residual.
- Interior of ice machine appears maintained in a sanitary condition. Ice scoop is stored in a clean container outside ice machine.

Note: Previous inspections have identified that equipment layout in kitchen was changed without approval. Kitchen prep handsink was also removed without approval. Premises has requested use for kitchen to be shared with other food preparation businesses. Applications will not be considered until the kitchen layout is restored to be able to accommodate additional food preparation businesses. DO NOT MAKE ANY CHANGES TO THE EXISTING KITCHEN LAYOUT AND EQUIPMENT WITHOUT WRITTEN APPROVAL.
