Observation:
There is a large accumulation of dust on the exhaust canopy and filters. This dust could drop into food and contaminate it. As well, failure to regularily clean and service the unit may pose a fire hazard, which insurance may not cover due to failure maintain the unit.
Corrective Action(s):
Immediately contact a professional HVAC company to clean and service the exhaust canopy and filters. Ensure this is done on a regular basis, as per the HVAC company's recommendations.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -21C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- High temperature dishwasher had a rinse cycle temperature of 76.7C at the plate's surface, as per max/min thermometer.
- Quats sanitizer in spray bottle had strength of 200ppm.
- Bleach sanitizer in spray bottle had [Cl2] over 200ppm. Suggest adding 1/2 tsp of bleach into 500mL of water.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with proteins separate or below RTE foods; and foods stored 6" off the floor on shelves.
- No expired foods in use. FIFO rules being followed.
- Valid FoodSafe certified staff present.
- General sanitation level is good. Improvement needed in the mentioned areas.
- No signs of pests.
- All equipment, surfaces and utensils in good working order.

ACTION
- Have the exhaust canopy and filters professionally cleaned and serviced immediately. Ensure this is done on a regular schedule, as recommended by the professional company.
- The exhaust canopy and filters shall be cleaned by staff on a regular basis, between professional servicing.
