Observation: Meat slicers observed to have accumulation of food debris during time of inspection.
Corrective Action(s): Immediately clean/sanitize meat slicer so that all areas are free of food accumulation. Ensure to follow your sanitation plan with regards to cleaning schedule of meat slicer/dismounting for sanitation.

Observation: During time of inspection noted more cleaning required underneath/behind equipment.
Corrective Action(s): Ensure all hard to reach areas, underneath/behind equipment are cleaning as apart of regular cleaning procedures. Date to be corrected by June 13th/22.

Routine Inspection:
*NOTE: No kitchen staff present at time of inspection.
-Hand sinks equipped with hot/cold running water, paper towel, liquid soap.
-Ice Machine kept in clean manner. Scoop stored appropriately.
-Quats sanitizer available.
-Walk-in cooler 1 - 1.4C.
-Walk-in cool 2 - 1.2C.
-"Pepsi" cooler (some dairy storage) - 1.0C.
*NOTE: observed soup cooling in cooler in shallow pan and small bunches - good. Reminder to always cool food to room temperature within first 2hrs and then to 4C within 4hrs. Store in cooler with pan not fully covered on top shelf.
-Both chest freezers - (between-20) - (-21C).
-Stand up freezer - (-20.1C).
-dry storage - Ok all food stored off ground.
*NOTE: Limit amount of wiping cloths being used at a time. cloths should either be submerged in sanitizer when not is use or single use only.
-Pest control services with licesened company in place.
-Dish washer not in use during time of inspection.
