Observation (CORRECTED DURING INSPECTION): General cooler air temperature is 10 C and food temperature is 8.5 C. Staff advises that the cooler was cleaned today.
Corrective Action(s): Cheese that was just put in this cooler has been transferred to another cooler (or freezer ok too). Small volume of ham was discarded. All dressings, mayonnaise are to be discarded. Operator is also moving all other food (produce, pineapple, etc.) to another cooler as well and is leaving this cooler empty. Do not use this cooler to store potentially hazardous foods until it can keep them at 4 C or colder.

Staff on site today has taken Food Safe - temporary certificate is available.
Food safety plan and sanitation plan - posters are posted.
Two door General cooler air temperature is above 4 C - see above.
Pepsi cooler - air temperature is at 4 C or colder - good.
Hand washing sink has liquid soap and paper towels.
Domestic bleach is being used to sanitize work surfaces - 100ppm detected using a test strip.
Two sinks are available for utensil cleaning - Disposable containers and utensils are to be used for customers.
Staff washroom - door is closed. Public are not allowed in kitchen (no access to washroom).
Mop sink is available.
