- Walk in freezer at -16 degrees C
- Food items protected from contamination
- Tongs available for bulk items
- Quaternary ammonium compounds (quats) sanitizer available in labeled spray bottles at 200 ppm.
- Three sink plugs provided for manual ware washing
- Pot and pan washer measured 71 degrees C at the utensil surface during the final rinse (minimum 71 degrees C at the utensil surface)
- Back hand washing station supplied with hot and cold running water, liquid hand soap, and single use paper towels
- General sanitation satisfactory. It was stated that proofers are cleaned daily. Dough mixers cleaned after each use.
- No signs of pest activity observed.
