Back of house hot station re-arranged. no health concerns noted with layout.
2 stations keeping condiments and ingredients on ice. Product containers noted to be submerged in ice - good
QUATS dispenser measured 200 ppm QUATS and measured the same in spray bottles
Rodent droppings from the previously noted areas removed. Facility sanitation has improved - good
Back of house double door upright cooler adjacent to the walk-in freezer repaired. Ambient temperature measured 4C.
Discussed cleaning schedule with operator. Kitchen area has been divided into 5 sections and evening staff are coming in 2 hours earlier to conduct cleaning of the premises.
Back door screen removed. Operator has repaired in house AC system and no longer requires the back door to be propped open.
