Observation: Griddle unit still not functioning properly - temperature needs to be manually adjusted to prevent over drying or maintain temp above 60 C.
Corrective Action(s): Ensure hot hold unit is in good working order and is capable of maintaining a consistent temperature of 60 C or higher without regular manual adjustment.
Operator indicates the unit has a work order - parts are being purchased to repair the unit.
Until unit is repaired, continuous monitoring of the food will be conducted and recorded to ensure food safety.

Observation: 1.Sanitizer jug at 3 comp sink empty. No refill jug available at 3 comp sink. Staff unsure where to get more.
2. Due to empty jug - re-filling sanitizer spray bottles are noted at <100 ppm QUATS
-Sanitizer test strips available
Correction: Ensure all sanitizer is maintained at 200 ppm QUATS for proper sanitizing of food contact surfaces.
1. Replace empty sanitizer jug
2. Always have an extra chemical jug available as one chemical is becoming low
3. Ensure all sanitizer bottles are refilled regularly and that sanitizer solution is checked with sanitizer test strips regularly to verify concentration
4. Train/educate staff on proper levels and use of sanitizer for food contact surfaces
5. Sanitizer available in other departments - borrow some solution from those departments if necessary. Put sign up over empty jug to inform staff of what actions must be taken.

*Ticket #AH00915001 issued for violation on Mar 1, 2022 - Fail to comply with the Correction Order Issued Feb 15, 2022

-Sanitizer noted 200 ppm QUATS at the dispenser and spray bottles.
-Upper hot hold griddle - noted above 60 C
-Lower hot hold griddle (shelves) - hot hold thermometers on each shelf noted 40 C and 50 C ambient temp - confirmed with FHA probe thermometer
-Whole cooked chickens (6) noted at 78 C with probe thermometer
-Current additional monitoring practice in place - every 30 minutes, probing chicken in lower section and using temp gun for upper section
***No additional monitoring noted for today

*Correction Order issued on Feb 15, 2022 still in place
*Contact FHA once Hot Holding Griddle is repaired and in the meantime continue regular temperature monitoring of PHFs
