Observation: Some food products in the walk-in freezer were stored directly on the floor.
Corrective Action(s): Keep all food products off the floor (at least 15 cm.).

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Walk-in cooler/freezer (hot food side) floor have some grime build up. Other areas of the deli as well needs cleaning - i.e. cabinet shelving units, corners, underneath triple sink and some part of equipment (doors, inside, etc.). Fume hood has grease build up and sticker was not up to date.
Corrective Action(s): Flooring in the above-mentioned areas requires thoroughly cleaning to remove grime as well as other areas that are mentioned.
Ensure that fume hood is up to date on service date.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Triple ware washing sink (hot food side) had water pooling underneath. It may be due to leaking pipe (crack, etc.).
Corrective Action(s): Ensure that there is no leak in the pipe. Stagnant and pooling water is not sanitary.

Hand wash sinks provided with liquid soap and paper towels.
Sanitizer (quats) measured 200 ppm - in spray bottles.
Walk-in coolers were at or below 4 deg C.
Walk-in freezer was at -18 deg or below.
Hot holding for rotisserie chicken and chicken pot pie was above 60 deg C.
Deli display cooler was at or below 4 deg C.
However, salad side was at 6-8 deg C. Monitor this side of the display cooler to ensure temp. does not stay at 6-8 deg C.
Other coolers in the Deli Dept. was at or below 4 deg C.
Staff hygiene - clean uniforms, hair restraint, observed hand washing and using of gloves
Food Safe 1 certified staff available on-site
