Observation (CORRECTED DURING INSPECTION): Food debris observed on utensils used for pastry. Operator stated the utensils were cleaned and sanitized twice daily, more than 4 hours.
Corrective Action(s): Clean and sanitize the utensils immediately. Utensils used for serving pastry must be cleaned and sanitized at least every 4 hours. Operator agreed to change the schedule to every 3 hours.

Routine inspection:
- Coolers (sandwich, under counter, stand-up) maintained at 4C or less.
- domestic freezers maintained at -18C or less.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 100 ppm bleach sanitizer available in bucket. Operator to prepare another sanitizing bucket at the front area.
- High temperature dishwasher registered 76C at the plate level.
- Ice machine maintained in sanitary condition. Ensure it is cleaned and sanitized at least every 3 weeks.
- Food products stored off the ground and organized.
- Temperature records maintained and available for review.
- General sanitation satisfactory.
- No pest activities observed at the time.
