Observation (CORRECTED DURING INSPECTION): Back door was open with a piece of wood blocking the bottom half. The purpose when asked to let cool air and for ventilation purposes. All doors must be closed and/or have a screendoor to prevent pests from entering the premises.
Corrective Action(s): Required operator to close the door and have a screendoor installed for ventilation purposes in the future, especially during summer.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Observed food debris and grease build-up:
1. Behind cooking stations/machine
2. Between and under prep-cooler work station. Operator is cleaning top and bottom of the cutting boards but not the prep cooler itself.
Corrective Action(s): Required operator to clean and sanitize the noted area above and have them cleaned regularly. Build-up of grease and food debris are attractions to pest and should be removed to prevent pest entering and harbouring the facility.

All coolers, including the walk-in cooler at 4 C or lower
Stand-up freezer at -18 C or lower;
No hot holding unit on at the time of inspection except a donair machine
Discussed approval of donair and its food safety plan
Discussed donair machine not placed under the fan hood completely; operator indicated that the fire inspector allowed them temporarily and to have all cooking equipment placed under and covered by overhead fanhood.
Operator plans to remove one of the donair machine they are not in use.
