Corrective Action(s): Service dishwasher so it is registering at least 50 ppm chlorine during the final rinse. In the interim, the smaller dishwasher (normally used for glasses) may be used for warewashing.

Routine Inspection
-Hand washing sink equipped with hot/cold running water, liquid soap and single-use towels.
-Hot holding of rice above 60 C.
-All coolers (except walk-in cooler) was at 4 C or below.
*Ensure food in inserts close to heat lamp is used within 2 hours
-Walk-in freezer at -18 C.
-Ice machine in a clean condition and scoop stored outside.
-Operator described proper cooling methods.
-No signs of pests at the time of inspection.
-General sanitation satisfactory
