Observation:
- Several containers of food in the walk in cooler not covered to protect food from contamination.
- Trays of raw shell eggs observed stored over bread.
- 2 light covers missing in the kitchen.
Corrective Action(s): Ensure all food is protected from contamination at all times.
- Cover all food products to protect food from contamination.
- Store raw shell eggs below ready to eat foods.
- Install light covers for the light fixtures.

Observation: Danby freezer and Kenmore freezer near the walk in cooler ambient air temperature -10 degrees C and -12 degrees C respectively.
Corrective Action(s): Ensure all frozen potentially hazardous foods are stored at or below -18 degrees C. Operator aware of ice build up in both freezers and will be defrosting them in the next 2 weeks.

Routine inspection:

Hand delivered outstanding permit fee letter. Cheque #334 in the sum of $250 made to Fraser Health received.

Kitchen and front service area hand sinks provided with liquid soap and paper towels.
Dishwasher registers 50ppm chlorine during the final rinse cycle. Test strips available for use.
Bleach sanitizer solution available for use in spray bottle.
Walk in cooler at or below 4 degrees C.
Preparation cooler inserts and lower section at or below 4 degrees C.
Hot holding at or above 60 degrees C.
Small domestic cooler next to hot holding unit at 3 degrees C.
