Observation (CORRECTED DURING INSPECTION): Product baking temperature verification log indicates that precooked wings are cooked to between 159-162 F even though the safe food temperature requirement stated in the Food Safety Plan is 165 F or greater.
Corrective Action(s): Ensure all foods that are cooked or re-heated are cooked to a safe temperature of 165 F (74 C).
Verify the internal temperature of cooked foods with a clean and sanitized probe thermometer.
If minimum temperature is not meant, continue cooking.

-Undercounter cooler and inserts at 4 C or below.
-Deep freezer at -18 C or below.
-Hot holding units that are in use at 60 C or above. .
-Temperature monitoring records maintained and available for review.
-Front and back handwashing sinks equipped with liquid soap, hot/cold running water and paper towel.
-3 compartment sink set up for manual warewashing and registered 200 ppm for quats in the sanitizing compartment.
-Surface santiizer in bucket available and registered for 200 ppm quats.
-Ensure walls and floors behind and underneath equipment are cleaned routinely.
