Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food (prepackaged shredded cheese, pasteurized milk, prepackaged meat pizza toppings, shell eggs, some prepped veggies) were above 4 degrees C (approximately 9-10 deg C temperature) inside the walk-in-cooler. Operator and staff confirmed that the walk-in-cooler was at or below 4 degrees C recently less than two hours ago and it had been recently stocked with the door being opened quite a bit.
Corrective Action(s): Operator moved cold potentially hazardous food above 4 degrees C from the walk-in-cooler into the other refrigeration units at or below 4 degrees C during the inspection. Operator moved pop bottles from one of the four door prep. cooler into the walk-in-cooler to increase the refrigeration storage space. Ensure cold potentially hazardous food is maintained at or below 4 degrees C.

Observation: A few ceiling tiles near the pizza oven had accumulation of dust/debris.
Corrective Action(s): Clean the ceiling tiles with noticeable dust/debris to maintain them in a clean condition; Correct within two days.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Walk-in-cooler was measured internally at 10 to 11 degrees C at the time of inspection. Operator stated this walk-in-cooler was recently below 4 degrees C. Operator was unsure when the walk-in-cooler undergoes a defrost cycle. Operator adjusted the temperature setting of the walk-in-cooler to lower its' temperature during the inspection. Operator stated during the heat wave a few days ago, they had been storing the cold potentially hazardous food inside the other refrigeration units. Operator confirmed that she is not expecting any additional food delivery over this weekend. The walk-in-cooler had a built thermometer and a thermometer placed inside of it.
Corrective Action(s): Do not store any potentially hazardous food inside the walk-in-cooler until it is maintained at or below 4 degrees C; effective immediately. Ensure the walk-in-cooler is maintained at or below 4 degrees C; Correct today.

Upright freezer and chest freezer temperatures were satisfactory.
No hot-holding was occurring at the time of inspection.
Handsinks were supplied with liquid soap, hot and cold running water, and paper towels.
3-compartment sink was supplied with hot and cold running water and it was equipped with drain plugs.
100 ppm chlorine sanitizer was available in a container with a wiping cloth.
Food storage areas and slicer were in a relatively clean condition. Dough mixer was in use at the time of inspection.
No signs of recent pest activity were observed at the time of inspection.
