Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Salad bar cold holding of food continues to be an issue. Inserts still placed on top of ice instead of immersing inserts within a bed of ice. Checked chicken pieces and were observed around 10 C. Product volumes intended for short hold times, but not consistent. Ice machine virtually empty.
Correction: A system by which cold potentially hazardous food can maintain temperatures below 4 C must be implemented at this facility. This will be reviewed at follow up inspection date noted on report.
Comments

Reviewed salad bar temperature controls. Staff revised stocking process to include an ice bath to provide better cold contact with food inserts (food). Staff have also increased temperature monitoring throughout breakfast and lunch rushes with good success. Temperatures have improved.
Audited salad bar and all stainless steel inserts under ice bath conditions below 4 C. Good and thank you.

**Possible kitchen renovations upcoming. Ensure any such plans for renovations are reviewed and approved by this office prior to initiating construction work.
