Observation (CORRECTED DURING INSPECTION): Onion gravy sauce cooked from previous night was not properly cooled. Internal temperature of food product was at 14C. Food product was portioned into metal shallow pan at the time of inspection to facilitate adequate cooling.
Food products need to be portioned into the large metal pans immediately once its cooked. Food products must not cool in large plastic containers until it has achieved an internal temperature of 4C within 6 hours.

Observation: Dishwasher, utensils, and equipment not properly sanitized as chlorine dishwasher is not in good working order. No sink plugs were available to fill up water for the 3 compartment sinks. Business is to use single use take-out items for lunch service. Small amount of dishwasher were able to be sanitized in a large container.

Observation: Low temperature chlorine dishwasher not in good working order as 0ppm of chlorine was achieved at plate level. Dishwasher unit needs to be repaired and 100ppm of chlorine needs to be achieved a plate level.
