Observation (CORRECTED DURING INSPECTION): No sanitizer solution was readily available for use in the food preparation kitchen.
Corrective Action(s): Sanitizer solution must always be available for sanitizing surfaces. Operator prepared fresh bleach solution in designated spray bottle at time of inspection. 100 ppm chlorine detected.

Comments

- Faucet at three-compartment sink now reaches all three sinks. Good.
- Reviewed manual dishwashing procedures. Ensure all employees responsible for washing dishes/equipment/utensils are properly trained in setting up the three sinks. Post additional instructions for the specific volume of bleach to add to the sanitizing sink.
- Walk-in cooler was organized. Cooked pickled meat items were properly covered and stored above raw meats.
- No cardboard was being re-used to cover food items. Good.
- All food preparation for ready-to-eat items is done in the designated food prep kitchen.
