Observation (CORRECTED DURING INSPECTION): Foods stored in sandwich prep cooler had internal temperature >14'C. All discarded at this time.
Corrective Action(s): All potentially hazardous foods requiring refrigeration must be stored at or below 4'C at all times.

206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation: Foods in the bottom two hot-holding units had internal temperature ranging in between 52-54'C. All placed <1 hour prior to the inspection. Manager had advised the technician was already contacted for service, and foods in these units are kept upto 2 hours only and discarded after. No records to show.
Corrective Action(s): Ensure all hot potentially hazardous foods are stored at or above 60'C at all times. Until repaired, all foods stored in these two units must be recorded - date and time placed in the units and discarded for each item.

Observation: Coffee stirrer stick by the drive thru stored in lukewarm water.
Corrective Action(s): Ensure these stirrer sticks are stored in ice at all times, to prevent bacterial growth on surface.

Observation: 1) Sandwich prep cooler operating >4'C. Ambient air temperature measured to be at 18.5'C.
2) Two hot-holding units operating <60'C.
Corrective Action(s): Ensure both units are repaired. Contact health inspector once repaired.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied. Discussed about using handsinks for dumping/handwashing stations interchangeably.
-Refrigeration temperatures satisfactory, other than prep cooler mentioned above.
-Hot-holding temperatures satisfactory, other than two pull out drawer units mentioned above.
-Temperature monitoring system in place. Records from today could not be accessed by Manager at this time.
-High temperature dishwasher achieved 72.8'C at the plate level after final rinse.
-200ppm QUAT available in buckets throughout, and at the automated dispenser.
-General food storage practice satisfactory.
-General sanitation level satisfactory, but could be improved by cleaning hard to reach areas on a more regular basis- surface underneath cooler door handles / floors underneath storage shelves by the back entrance.

Correction Order issued at this time. Ensure the prep cooler and pull out drawer hot holding units are repaired. Until then, time tracking records must be kept on site and provided to the health inspector during the follow-up inspection. All cold potentially hazardous foods must be stored in metal inserts --> ice bucket. Ensure all sides are in contact with ice. Each container must be refilled every 2 hours. Any foods left inside these metal inserts for more than 2 hours to be discarded as agreed at this time.

Please contact the health inspector once the prep cooler/hot-holding units are repaired.
