Observation (CORRECTED DURING INSPECTION): Cooked beans noted at 56 C in hot holding unit.
Hot holding unit turned on after hot food placed in unit.
Corrective Action(s): Ensure all equipment (coolers / hot holding units) are turned on and at proper temperature before placing food in unit. Hot hold unit must be at or above 60 C before hot food can be safely held in unit.

Corrective Action(s): Ensure all opened food products are placed in container that is pest proof container (hard plastic or metal with a fitted lid). Do no leave open bags / containers of food out over night.

Observation: Back screen available - in disrepair hands above the ground
Corrective Action(s): Ensure a proper screen is available and in use when the back door is left open. The screen should cover and secure the entire door opening from top to bottom to prevent flying and walking pests from entering the open door. Operator will review options of upgrading screen doors (retractable).

Observation: 1. 3 comp sink is over flowing with dirty dishware - space is concern with volume of dishes
2. Front handsink used to wash tomatoes - no prep sink available
Corrective Action(s): Ensure premises is able to manage the food service being provided. Operator is reviewing options for improvements:
1. Mechanical dishwasher to handle the volume of dishware and allow for more space. at least 2 comp sink will still be required.
2. A handsink is not to be used as a prep sink - a prep sink should be considered in an revised floor plan or remodeling to address service.
Once new floor plan and service plan is generated, provide a copy for Fraser Health to review and approve before implementation. Recommendation of such changes are within 1 month.
