Routine inspection
- Hand washing stations are provided with hot/cold running water, liquid soap and single use paper towel in dispenser.
- Upright cooler dedicated to thawing chicken is at or below 4C. Proper thaw process for chicken is followed.
- Chicken hot holding unit and gravy hot holding is at or above 60C
- Walk-in freezer is at -15C. Reach-in freezer is at -12C Food was frozen to touch at the time of inspection. Note these freezers were in the midst of defrosting at the time of inspection. Please ensure to monitor the temperature for these freezers and maintain the temperature log up-to-date.
- Under the counter cooler is at 4C
- Ice machine is clean and ice scoop is stored properly.
- General sanitation is satisfactory. Floor is clean and free of food debris.
- Sanitizer QUAT 200 ppm are provided in sanitizer buckets and wiping clothes are stored in the solution.
- Counter tops and food contact surfaces are clean and good working order.
- Three compartment sink is maintained. Mop sink and cleaning agents are maintained.
- Food internal temperature measurement is followed for chicken in cookers. Temperature log is up-to-date.
- No sign of pest at this date.
- Staff are food safe trained.
