Observation (CORRECTED DURING INSPECTION):
1- Staff washroom were out of paper towel. Paper towel were provided at the time of inspection.
2- Hand washing sink in food prep counter at the back area is not in use. Paper towel and liquid soap are to be provided. " No hand washing in the sink" sign was obbserved on the wall above the sink. Sign was removed by the manager. Soap and paper towel was provided.

Comments

Routine inspection
- Hand washing stations in the kitchen are provided with hot/cold running water, liquid soap and paper towels in dispensers
- All prep under the counter coolers are maintaining foods at or below 4C degrees.
- Walk in coolers are maintaining foods at 4 degrees C or colder.
- Walk-in freezer is at -18 degrees C or colder. Ice cream freezer is at -18C or colder.
- Separate thermometer is provided for cooling units. Temperature monitoring log is to be kept updated.
- Hot holdings are at or above 60C.
- Glass washer and low temperature dishwasher both had a 100 PPM chlorine residual at the dish surface.
- QUAT sanitizer at dispenser measured a 200 PPM residual. Sanitizer available in buckets with wiping cloths stored inside the solution.
- Dry storage is organized and food stored off the floor.
- Janitor sink is maintained.
- Staff have food safe training.
- Thawing process for chicken was discussed. Walk-in cooler is utilized for proper thawing of meat.
- Health permit posted.
- Customer washrooms are maintained. One urinal in men's room out of service is to be repaired and back to service as soon as possible.
- General sanitation is overall good. Cleaning underneath equipment is to be done frequently.
Pest control:
UV light traps are installed in deferent areas of the kitchen and bar.
Cracks and holes behind the ice cream cooler in the kitchen are sealed to prevent ant entering the kitchen. No sign of ants in the kitchen at this date.
Mice traps are in place. No obvious sign of mice activity at this date.
