- Hot holding units are >/=60C
- 3 compartment sink for manual dishwashing in use with 200ppm of QUATS
- All sanitizer buckets are labeled with cloths soaking inside of 200ppm QUATS solution
- Food held at room temperature are properly recorded and time stamped. All foods stored 6" off the ground
- General sanitation is very good. No pest observed during inspection.
