Observation: Cutting board used for vegetable prep was observed to have deep cut marks through out the board.
Corrective action: Replace the cutting board with a cutting board that is smooth, non-porous and easy to clean.
Health rationale: Food contact surfaces must be smooth, non-porous and easy to clean and sanitize to reduce pathogen growth and/or toxin production.

Follow-up inspection conducted to the report #258714.

Comments
Work order is placed for a new cutting board with Subway Head Quarters. Manager informed that in the inerim, they are only using the available cutting board to stabalize the slicers and not as a food contact surface. Sliced vegetables will directly fall into inserts without touching the cutting board.
Permit was placed near the front hand washing station which is visible to the public.
