General comments: - Ice machine cleaned and sanitized - Knives have been properly cleaned and sanitized - Sanitizer buckets present and all cloths dispensed into sanitizer solution *- Ceiling tiles still not cleaned; cleaning company scheduled for tomorrow night; increase frequency of cleaning to every 3 months instead of 4. * - Flat top cookers not being used at moment; discussion about use lead to discovery that only soups and sauces are being made. Minimal oil used to fry veggies for soup bases and no frying or cooking of proteins being done.
