-Follow-up inspection to February 27, 2020.
-Quats sanitizer pails are changed every 30 minutes. Quats sanitizing solution was approximately 200ppm.
-Potato press sanitation has improved. Ensure staff keep all equipment in clean and sanitary condition at all times.
-Sauces made the two days ago were at 4C. A large pot of butter sauce was made this afternoon and was cooling at room temperature. Facility has not purchased a thermometer to verify proper cooling. Thermometer on-site was broken and was designed for an oven (starts at 40C). Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less. Chef went to purchase a thermometer at the time of inspection.
