Observation: There is food and debris accumulation on the bakery floor. Deep cleaning and regular cleaning to be improved.
Corrective Action(s): Update your cleaning schedule and clean regularly. Increase frequency of deep cleaning (shelves, floor under shelves and equipment, hand sinks, walls, etc.)

Observation: Proofer equipment is leaking water onto floor.
Corrective Action(s): Servicing/repair has been ordered. Repair as soon as possible and wipe up water as soon as possible.

Routine check.
Food Safe trained staff on site - note expiry dates (renew before expiry).
Food Safety Plan - follow plan. Reviewed food safety plan for pumpkin pies. Recommend date labelling more clearly (current 5 digit number used). Melted chocolate - verify salmonella free from supplier.
Liquid pasteurized egg used.
Coolers today are at 4C/40F or colder.
Hand washing - both sinks have hot/cold water, liquid soap, and paper towels in dispensers.
Hair net/apron worn. Disposable gloves also used.
Quats sanitizer - fresh sanitizing solution at 200ppm. Wiping cloth sanitizer changed during inspection. Follow sanitation plan.
Whipping cream - temperature is at 40F. Reviewed cleaning and sanitizing of whipping cream equipment. Follow sanitation plan.
Cleaning - see above.
Proofer leak - see above.
Pest control - licenced pest control and monitoring is in place. Reports available for review.
