Observation: *REPEATED VIOLATION*
Mouse dropping were observed in the following areas:
- Near laundry machine
- Behind ice machine
- Behind whole wheat dry storage bin
Corrective Action(s): - Remove the mouse droppings and disinfect the area with 1 part bleach to 9 part water solution. Use proper PPE during cleaning.
- Discuss the issue with your pest control company to implement control measures.

Comments

Routine inspection conducted at the school cafe.

Note: Facility has upsized and replaced the walk-in freezer. Renovation was completed as per the approved floor plan.

Temperature:
- Temperature of walk-in cooler at 2C
- Walk-in freezer at -18C
- Freezer in the back at -17C
- Undercounter prep coolers (x3) at 4C or less.
- Stand-up cooler at 3C.
- One prep cooler and hot holding units were not in operation at the time of inspection.

Storage:
- All food items were stored at least 6" off the floor.
- All products were found either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash stations were adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- QUATS sanitizing solution was dispensed at a concentration of 200ppm. Sanitizer spray bottles were available in each food prep area.
- 3 compartment dishwashing sink and 2 comp prep sink maintained in good sanitary condition.
- High temp mechanical dishwasher reached 72C at rinse cycle.
- Utensils and tongs were found in sanitary condition.
- No food debris was observed on dough machine, meat slicer and mandolin.
- No grease/dirt build-up observed on vents.
- No grime build-up observed in ice machine. Scoops were stored outside in sanitary manner.

Pest Management:
- Professional pest control company conducts routine checks. See violation above.
- Mechanical traps were present throughout the facility.

Administrative:
- Staff has valid FoodSafe Level 1 certificate.
