Observation (CORRECTED DURING INSPECTION): Small counter cooking unit observed stored on top of grease trap near pizza oven. Grease traps are contaminated surfaces and cannot have food or food equipment stored on/near it.
Corrective Action(s): Do not store food or food equipment/containers on grease trap. Wash and sanitize cooking unit before use.

304 - Premises not free of pests [s. 26(a)]
Observation: New mice droppings were observed in the dry food storage area along the south back wall floor (under cans of bamboo shoots) and behind the pots and pans dishwasher floor drain. March 22, 2019 Pest Control report indicates no new activity observed.
Corrective Action(s): Notify pest control company of new activiy and monitor and control. Wash and sanitize area. Correction required this week.

Observation: Walk in freezer floor tiles along entry door in the inside still in need of repair. Repair to prevent further damage to the walk in freezer unit.
Corrective Action(s): This repair is pending and will need to be completed in the near future.

Corrections required from first inspection completed:

Unused equipment is now removed from food premises - good.
Refrigeration unit at sandwich station has been repaired.
Building materials and furniture have been removed from premises.
Wooden prep table at rear entrance is not used for food preparation.

Organization of premise has improved greatly. Good work.

Outstanding repairs needed: Cracking floor tiles in walk in freezer. Operator informs me this will take longer as repairs have to been scheduled with building maintenance. This repair is pending.

Premise in general is sanitary.
Food protected from contamination.
Dish washer 1 final rinse at 77.9C at the plate as per min/max thermometer.
Dish washer 2 pots and pans final rinse at 72.9C at the plate as per min/max thermometer.
Staff demonstrate good personal hygiene and safe food practices.
Tasting spoons are only used once - good.
All hand sinks in use with paper towels liquid soap and warm running water.
Staff washrooms and storage is sanitary with fully stocked hand sinks.
Dry storage and organization is satisfactory.
Walk in cooler temperature at 3.2C.
Walk in freezer temperature at -22C.
Temperature monitoring and daily logging in place for all equipment.
All cold holding units are at 4C or below. All hot holding units are at 60C or above.
Salad bar island is suspended in ice fully.
Condiments and utensils for customers are sanitary.
Ice machine is sanitary with dedicated ice scoop.
Quat sanitizer in use in spray bottles at 300 ppm quats.
