Observation (CORRECTED DURING INSPECTION): - Three containers of butter sauce noted in walk-in cooler which were not covered and one container of rice which was not fully covered.
Corrective Action(s): - Ensure all food is covered with food grade wrap or tight fitting lids to prevent contamination.

Observation: - Cooked rice noted stored in 40L plastic storage box which was not food grade.
Corrective Action(s): - Store food in food grade containers which are of suitable size for cooling and transport (as per food safety procedures submitted). Remove plastic storage boxes from premises. [Correction date: today]

Comments

- Operator processing lamb curry at the time of the inspection.
- Product being cooled using ice wands in shallow metal containers. Operator has 5 ice wands and adds ice to products to facilitate cooling. *Ensure products is being stirred and temperature monitored throughout the cooling process. Probe thermometers present for monitoring temperatures.
- Station in use maintained in sanitary condition
- Handsink accessible to station equipped with hot and cold running water, liquid soap and paper towel.
- Quats sanitizer present at station for sanitizing surfaces. Concentration was 200ppm.
- Walk-in cooler was 4C. Butter sauce and rice in walk-in cooler at 4C.
- Walk-in freezer was -18C
- High temperature dishwasher functioning. Final rinse was 77C at dish surface.
* Reviewed transport of food with Operator. Food is to be transported in cooled cambro units according to food safety procedures submitted. Large container which rice was noted in is NOT acceptable. Not only is container not food grade, but also it is too large. Food is to be transported in containers designed for cambro units as per procedures which were submitted. Variance from procedures is not permitted.
