Unit is not functioning, despite repeated repairs. Corrective Action(s): Discontinue using this unit. Replace unit. Until such time as unit is replaced remove all potentially hazardous foods, including ham (discarded), cheeses, sauces and bacon. Fruits and vegetables ok to stay in this unit. follow up in ten days to review status of unit. Violation Score: 25

Comments

Freezers range in temperature from -5 to -15 C. Dish sink with sanitizer solution in third sink measured at 200 to 400 ppm Sani-bucket measured at 200 to 400 ppm. Handwash stations in food prep and washroom areas stocked with soap and paper towels. NOTE: Facility still has other cooling units not used and not working that should be removed from premises.
