210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Frozen fish was thawing out at room temperature in a tray on top of the dishwasher.
Corrective Action(s): As previously discussed, DO NOT THAW FOOD OUT AT ROOM TEMPERATURE. Frozen food must be thawed in the refrigerator or under cold, running water. Fish was measured to be at -2C and was returned to the walk-in cooler at time of inspection.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: - Cooking equipment need to be thoroughly cleaned and sanitized - significant amount of grease and food accumulation noted on stoves and fryer.
- Floors under all equipment and in all corners behind equipment need to be cleaned.
- Mop bucket with dirty water was stored directly next to rack of clean dishes and equipment.
Corrective Action(s): - Deep cleaning for equipment and floors needs to occur at least once a week.

- Store the mop bucket away from any food and food-related items. Ensure to empty the mop bucket each night. Mop bucket was moved to storage closet (not for food) at time of inspection.

Observation: Light covers were missing for several bulbs in food prep area and in dry storage room

Comments

- Hand sink was properly supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution available in bucket at 200 ppm. **Ensure sanitizer solution is in use and changed every 4 hours.
- High-temperature dishwasher reached 71.4C at the dish surface during the rinse cycle - good.
- Walk-in cooler, prep cooler, one domestic cooler, and sweets cooler were measured at 4C or colder
- Freezer temperatures satisfactory
- No hot holding
- Food storage practices satisfactory
- Dry storage area satisfactory. Ensure all food items are stored off the floor - a higher shelf is needed for the bags of rice.
- Reminder that tin foil for serving trays used to hold hot plates must be changed after each use. Trays observed to be clean at time of inspection.
- Pest control in place, however employees were not able to find pest control invoices. Email pest control invoices for the last 3 months to Ying.Tan3@fraserhealth.ca
