Observation (CORRECTED DURING INSPECTION): Sliding door cooler used for storing cheeses and fresh tortillas registered 5-6 degrees C at the time of inspection.
The cooler appears to be overstocked with tortillas.
Corrective Action(s): Remove some tortillas packages and store them in a different coolers. Repair or adjust the cooler so that all potentially hazardous products such as cheeses are always stored at 4 C or below. Alternatively, you may store cheeses in the pop cooler which is colder than 4 C ( immediately)

Comments

* A few dented cans were taken out during the inspection. These cans must be discarded. Ensure that all food cans are carefully inspected before displaying them
on shelves to check for any dents, bulging, rust or leaks. All damaged/dented/rusted and leaking cans must be discarded.
* Brooms etc must be stored away from the cooler.
* Bleach sanitizer in spray bottle too strong ( 1000 ppm). Ensure to use only 1 oz bleach per gallon of water to make 200 ppm chlorine bleach sanitizer.
* Ensure to monitor and record temperatures for all cooler at least once a day.

Sliding door cooler in the kitchen < 4 degrees C.
Upright freezer at -11 C.
Glass case cheese display cooler < 4 C.
Upright display freezers < -18 C.
Beverage cooler < 4 C.
Ice cream freezer < -18 C.
Liquid soap and paper towels available at the hand sink.
