Observation (CORRECTED DURING INSPECTION): (REPEAT VIOLATION) Miso soup in a hot holding unit measured at 40C internally. This batch was prepared 2.5 hours ago. On site staff was instructed to boil the soup for a minimum of 15 seconds. Miso soup is to be used for another one hour, and discard any remaining soups.

Observation (CORRECTED DURING INSPECTION): Food contact surface sanitizer was not available in the back of kitchen at the time of inspection. 100-200 ppm chlorine sanitizer was prepared at this time.

Observation (CORRECTED DURING INSPECTION): Food contact surface sanitizer in the sushi bar area was measured >200 ppm, resulted in bleaching out the test paper. Too much chlorine is considered chemical contamination. Demonstrated chlorine sanitizer preparation with onsite staffs. 100-200 ppm chlorine food contact surface sanitizer prepared at this time.

Routine inspection conducted:
Hand washing stations are fully equipped with hot and cold running water, liquid soap and paper towels.
General sanitation is adequate.
All coolers measured at 4C or less.
All freezers measured at -18C or less.
No recent sign of pest activity noted at this time.
Hot holding, other than miso soup, measured at 60C or higher (rice, sauces, etc.)
Kitchen hood in sanitary condition, and next cleaning not due until Feb 24, 2023.

Please note that any further violation in regards to hot holding temperature (miso soup or others), may result in progressive enforcement actions such as issue of violation ticket.
