209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1.Raw meat stored in a bus pan on the floor underneath the cook line equipment.
2. Bowl of sweet and sour sauce stored underneath prep cooler.
3. Tray of whole eggs and cracked shells stored above rice in walk-in cooler.
Corrective Action(s): 1&2. Storing food directly on the floor underneath dirty equipment is not acceptable.
Meat had just been taken out of the cooler for cooking and was placed in the oven.
Sweet and sour sauce was discarded.
Do not store food directly on the floor and underneath equipment that is dirty.
3. Do not store meats and eggs above vegetables or ready-to-eat foods (foods that may not be cooked before eating). Tray of eggs was re-located.
This is a repeat violation.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Frozen meat placed in sink to thaw without being placed in cold water or under running water.
Corrective Action(s): Meat must be thawed under cold running water or in cold water that is changed every 30 minutes. Meat can also be thawed in the cooler, or in the microwave (and cooked immediately after). This is a repeat violation.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Butcher knives put away between butcher block and wall without being cleaned and sanitized.
2. General sanitation still requires more work - gaskets around prep cooler are dirty and mouldy, grease and food residue around prep coolers and behind and underneath equipment, floors are dirty. Exhaust system requires servicing - grease is very visible.
Corrective Action(s): 1. All equipment must be cleaned and sanitized after use and stored away in a clean manner. Do not store knives between the butcher block and wall as this area is not easy to clean.
2. Continue cleaning all areas of the premise. Service the exhaust system as it is overdue. City of White Rock/Fire Department to be notified.
Correct immediately.

-Efforts have been made to clean facility but more work is required. Cleaning must be carried out at a regular frequency.
-Remove equipment that is no longer used.
-Hand sink available for handwashing.
-Washroom door kept shut.
-Regular bleach on-site.

**REMINDER:
-Cut veggies cannot be stored outside at room-temperature. Only take them out during food prep for a maximum of 2 hours in total.

-Follow-up inspection required.
-Violation ticket to follow.
