Hot holding case repaired 68 - 72 C
Reviewed 2 hour room temp holding of PHF buns. Ensure amount of product discarded that has exceeded the 2 hour holding period is documented.
It is recommended that signage be posted to advise customers that such buns should be consumed immediately or stored under refrigeration in a timely manner.
Wiping rags in use stored in 100 ppm chlorine. Operator has test strips and demonstrated knowledge for proper use.
Clean cloths stored in a sanitary manner.
Additional tray rack covers have been purchased.
All displayed food product properly protected.
Utensils no longer stored in food product containers.
Washroom and walkin cooler cleaning has been completed.
