Operator has obtained a new undercounter cooler, at time 2 C.
Prep cooler lids now kept down when not in use, however operator should further adjust temperature colder to provide a buffer space.
Droppings removed with additional trap provided --> plug up hole where grease interceptor plumbing enters room.
Dishwasher latch has been repaired, unit now able to close properly.
Rechecked sanitizer dispenser, still yielding > 400 ppm quat solution. Staff advised that service company had sent them new calibration tips for the dispenser, this was adjusted on the spot; EHO rechecked solution to be ~ 200 ppm. YOU must routinely check the solution with your test strips to ensure that the sanitizer strength is adequate.
