Observation: One sink plug for three compartment sink does not properly plug the drain. A tub placed in the sink was used for washing dishes with soapy water in the meantime.
Corrective Action(s): Replace sink plug. Ensure each of the three compartments has its own plug.

Observation: Used moulds made of tin foil used for baking hot dog buns were being reused and stored on clean equipment rack.
Corrective Action(s): Discard all used tin foil moulds. Tin foil is a single-use material and must be discarded after each use.

Comments

- Hand washing sinks were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Bleach sanitizer solution available in spray bottle at 200 ppm.
- Three-compartment sink maintained in sanitary condition. Sanitizer solution in sanitizing sink available at 100 ppm (chlorine).
- Walk-in cooler measured at 2C
- Walk-in freezer and freezer in front retail area measured at -18C or colder. *Note: blast chiller not working and not in use.
- General sanitation satisfactory at time of inspection
- Food storage practices satisfactory
- Ensure floors in corners are cleaned regularly
- Pest control in place.
