Stoppers on site for the sanitizing sink *Ensure monitoring logs are documented every day when kitchen is in operation as gaps in the logs were observed. Dishwasher at 74c (At plate level). Soap dispensed into wash tank Cooler cold holding at <4c Freezers cold holding at <-18c Quat test strips on site Quat sanitizer on site and tested at 300-400ppm. Kitchen clean and being maintained.
