Comments

Walk in, both prep and bar cooler used to store milk are all at 4 C or colder. Hand washing stations (bar, kitchen, and staff washroom) have liquid soap and paper towels. Kitchen food prep - non-latex gloves are also worn. Walk in and dry storage organization is good. Dishwasher has a chlorine sanitizing rinse. Glassware washer has an iodine sanitizing rinse - 12.5ppm required. Monitor chemical concentrations and fridge temperatures daily and record. Improve monitoring for pests as discussed.
