Comments

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating below the required temperature of 4'C; Freezers operating at/below required temperature of -18'C.
-Hot holding units operating above 60'C. Temperature records kept up to date.
-200ppm Quats available in buckets throughout. Automated dispenser functioning.
-Low temperature dishwasher achieved the minimum level of chlorine sanitizer (50ppm) at the plate level after final rinse.
-General food storage practice is good throughout.
-Ventilation canopy hood serviced and maintained.
-No evidence of pest activity observed. Professional pest control company contracted.
-Washroom handsinks satisfactory.

General maintenance and sanitation of the facility is good at this time. Keep it up!
NOTE: Cooked chicken >40'C placed on metal racks for rapid cooling. Cook has advised they do not stay at room temperature longer than 30 minutes before placed in food grade container --> walk-in cooler for storage.
