Observation (CORRECTED DURING INSPECTION): 1. No sanitiser concentration detected in bucket.
2. Sanitizer in spray bottle was too strong; >200 ppm chlorine.
3. Several dirty wiping rags was stored on counter tops.
***These are repeated violations.
Corrective Action(s): 1. Staff created a new sanitising solution in bucket with 100-200 ppm chlorine.
2. Use 1 tsp of bleach per 1 litre of water to create 100-200 ppm chlorine sanitizing solution.
Purchase an instrument to measure the correct amount (2 days).
3. Store wiping rages in sanitizing solution to prevent microbial growth.
***Fail to comply may result in further enforcement actions taken.

Observation (CORRECTED DURING INSPECTION): 1. Staff wearing rubber gloves handled raw meat, did not take off contaminated gloves nor wash hands, and then touched the exterior of food containers when transferring raw meats into the containers.
2. Staff was chopping raw meats, did not wash his hands, then touched the sanitizer bucket to adjust the concentration when requested.
***These are a repeated violations.
Corrective Action(s): 1. Educated staff on removing gloves and washing hands prior to handling clean equipment to prevent cross-contamination of food.
2. Educated staff to wash hands when hands are contaminated prior to handling clean equipment.
***CORRECTION ORDER issued.

Observation: 1. A number of food containers stored directly on floor of walk-in cooler.
2. Large bowls of raw meats stored directly on top of containers of vegetable. No direct contamintaion of food was observed.
Corrective Action(s): 1. Do not store food containers on the floor (1 day).
Create another layer of shelving on the shelf rack in the walk-in cooler to store food (1 week).
2. Store ready-to-eat foods above/separated from raw meats (immediately).
