Comments

-There was a fire at the Deli on Saturday. Discussed with the manager on site. All affected food was discarded and the front of the deli was cleaned. A list of the discarded food was available on site. Two display coolers will be replaced and are currently not in use.

Hand sinks supplied with hot and cold water, soap and paper towels.
Quats sanitizer was at 200 ppm.
All coolers were < 4 C.
All freezers were < -18 C.
Hot held items were > 60 C.
Temperature records were up to date.
No evidence of pests.
The dishwasher final rinse cycle reached 71 C at the plate level.
