203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): One box of grilled chicken was placed in cooler as soon as staff saw inspector walked in. Another box of grilled chicken was left on the counter. Chickens were probed to be between 25 to 29C. Staff explained that they were cooling the chicken down.
Corrective Action(s): Reviewed proper cooling procedure: cool down the chicken in single layer on metal shallow pans for 2 hours max before transferring to cooler to complete cooling process. Do not cover container when cooling food. Obtain more metal shallow trays to cool down food properly.

Observation (CORRECTED DURING INSPECTION): Stack of pre-portioned bowls of tofu and seaweed for miso soup, as well as boxes of edamame were left on the counter.
Corrective Action(s): These items should be kept in the cooler <4C until use.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Measured 0ppm bleach sanitizer in the bucket. Operator informed that they mixed the bleach in the morning and hasn't changed the solution since.
Corrective Action(s): Please remember to remix to have 100ppm bleach sanitizer to use throughout the day. Use test strips onsite to determine concentration.

Observation: 1) Soy sauce was placed by bathroom door in the back. 2) Boxed ginger was placed on the floor in the front.
Corrective Action(s): Keep food away from bathroom areas and 6 inches off the ground.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Observed two syran wrapped raw tuna left on the counter, one was measured at 4C and the other at 7C. Operator informed he was defrosting the fish.
Corrective Action(s): Do not leave fish out at room temperature to defrost, use cooler. Operator placed tuna back to cooler.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation (CORRECTED DURING INSPECTION): Observed two raw salmon on a piece of cardboard with knive between the fishes, and paper towel on top of the salmon. Confirmed with operator that staff was cutting fish on card board.
Corrective Action(s): Please use a proper washable surface such as cutting board to cut food. Card board is not a suitable food contact surface.
